Corn tortillas are a flat unleavened bread made with nixtamalized corn. When fresh or at least warm, they are soft and flexible. As they get colder and/or older, they become more brittle. Corn tortillas are often fried to make Tortilla chips or hard taco shells.
Rather than nixtamalizing your own corn; use masa harina.
