Puntarelle is a form of chicory which comes in two varieties: puntarelle di Gaeta Puntarelle di Galatina

Often picked when young for tenderness. Maybe eaten raw or cooked. Traditional ingredient in salad of same name where leaves are stripped and soaked in cold water until they curl. Served with a dressing of anchovy, garlic, vinegar, and olive oil.
